To be more prepared for your next meat purchase, you want to learn some tips. This way, you know what cut of meat to get and how to ensure the quality of every cut. Then, let the butcher pre-cut the meat, so you end up with equal, uniform portions.

Understanding the Various Beef Cuts

When you understand the various cuts of bees, you will buy beef confidently and identify what exactly to look for. Primal beef cuts include chuck, flank, loin, rib, brisket, round, shank, and short plate. These cuts have sub-primal cuts that include porterhouse, filet mignon, and ribeye. But if you do not know all of these cuts or do not see the cut you need, the butcher can suggest equally appropriate cuts or substitutions.

Identifying Beef Quality

Beef quality can be determined through its marbling, temperature, lack of moisture, and colour. The colour of the best beef to buy is bright red or purplish. Meat with brown spots is decaying. In addition, fresh beef has the least amount of moisture. Make sure to buy beef that has been kept cold. Also, marbling is essential for tender beef cuts like ribeye because it intensifies the steak’s buttery richness when cooked.
